My own personal tribute by D.K.
I created this page as a personal tribute to our acclaimed chef but to also introduce the world to a truly great person. I only just met him last October 2019 for the first time, and since then I've come to know Tim as a chef, a business partner, and a friend.
"Character is like a tree and reputation is like it's shadow. The shadow is what we think of it; the tree is the real thing." Abraham Lincoln
"A good name will shine forever." Proverb
"It matters not what you are thought to be, but what you are." Publilius Syrus
Tim's frequent self-description is that he "was born, raised, and chef-groomed in South Jersey." He describes his cooking as taking "regional and international flavors, and mixing with local fresh ingredients." But let me tell you some of my own observations.
Always Striving for the Perfect Execution
In everything culinary, he has to be perfect. As a business partner, that can get to be a real pain in the ass. As a friend, his reputation as a Chef is a fiduciary responsibility we all take very seriously.
This is baby Ace
Born premature, smaller than the size of Tim's hand, Ace is an example of how good a father he is. His kids, Amani and Julius, sometimes come to the restaurant. They are hard workers, intelligent, street smart, and just really a pleasure to be around. His kids are a testament to Tim and his wife Monique.
As a culinary teacher at the Camden County Technical School, his students have come to work with him at The Wing Kitchen. Like his own kids, those students have character and skills that I know are from Tim's teaching.
The first time he was on the Food Network's "Chopped" show he lost. But like the champion that he is, Tim came right back and won the next time he was there. His first restaurant concept, The Wing Kitchen, has already won numerous awards from the best donuts to the best chicken wings.
Just from looking at the success of The Wing Kitchen, you would not know all the setbacks and nay sayers he has had to overcome. Though he has not mentioned or dwelled on his struggles with me, watching his dedication to building his culinary business, you know its because he has not left the lessons from his past struggles behind, and has not let those past experiences keep him behind.
